Rhubarb

Rhubarb (Rheum rhabarbarum) are herbaceous perennials growing from short, thick rhizomes. They have large leaves, somewhat triangular with long fleshy leaf stalks. The raw leaf stalks are crisp with a strong, tart taste and commonly cooked with sugar and used in pies and other desserts. Rhubarb can be dehydrated and infused with fruit juice. There are a number of varieties that have been domesticated for human consumption.

Rhubarb is a fantastic choice for the first time vegetable grower as it is so easy to grow. It will flourish without too much attention and tasty stalks when there is little else ready for harvest in the garden. Rhubarb is very hardy, frost resistant vegetable!

NOTE: Rhubarb is usually considered a vegetable in the United States, however due to a court decision in 1947 that since it was used in the United States as a fruit, it counted as a fruit for the purpose of regulations and duties.
